Banana Bread with Chocolate and Berries

This recipe is so delicious and versatile. It’s great for getting rid of left over fruit (such as over ripened bananas), but if you have things such as berries, apple, whatever, you can throw them all in and it will still taste great. I love making this on a Sunday and having it to pick at in the mornings are as a snack during the week.

Banana bread with chocolate and whatever else you want to throw in it!

Ingredients:

3-4 ripe bananas

1/4 c melted butter

1 c sugar

1 1/2 c all-purpose flour

1/4 tsp salt

1 egg, beaten

1 tsp baking soda

As many choc chips as you like… and anything else

Method:

Preheat the oven to 350 degrees. grease a baking tin.

Mash the bananas in a bowl. Add the remaining ingredients, including the beaten egg to the bowl and combine. I usually add lots of choc chips, sometimes 2 cups, but add as many as you want. I added 1 cup of mixed berries for this recipe as well.

Bake for 55-60 mins until a skewer inserted into the middle comes out clean.

Here’s another alteration of the choc banana bread, switching out the banana for zucchini – sounds intriguing, right? Thanks Kathy, i’ll definitely be giving it a try and i’ll tell the Bogan that it’s “Choc Chunk and Lime Bread” before he sees flecks of green in his food and scrunches up his nose – once he discovers it tastes delicious, what’s in it will no longer matter!
